Kona Kanpachi is ocean raised in Kona Hawaii. Distinctly fresh, sashimi-grade white fish, raised sustainably in the waters off Hawaii. The clear blue waters of Hawaii is the only place in the world where Kanpachi are grown in the ocean. Expect a fat content that is higher than hamachi and a silky texture with the look of candy glass. We find its very rich and deep olive oil taste to be the best part.
‘Ono’ is a Hawaiian word meaning “delicious”. Only found in Hawaiian waters, Ono cooks up snow white and has a tuna like texture. Served raw, Ono has a smooth velvety feel and a sweet, buttery taste. Fantastic for raw applications, great for grilling or searing. It’s beautiful and clean, jewel like appearance is known to convert many non- fish eaters.
Japan Salt Ponzu from Kochi prefecture has a refreshing aroma and sourness of yuzu juice. A well-balanced mixture of vinegar and soup stock is blended with traditional sea salt from Izu Oshima and Hiragama for a mild salty compliment to any fish applicatioin.
