Misoyaki Marinade Recipe

Misoyaki Marinade
1 cup white miso (fermented soybean paste)
1 cup sugar
½ cup mirin (sweetened rice wine)
½ cup sake (or dry white wine)
1 tsp sesame oil
Combine ingredients in a small saucepan, and stir over low heat until sugar dissolves.  Let marinade cool, then coat both sides of the fish. Put back in the fridge for 8 hours - 48 hours.
Scrape off most of the marinade and bake 450 degrees until cooked through. Then turn the broiler for just a minute…. until a beautiful golden brown.
