We discovered years ago that Kaku is quite rich in natural oil and tastes great raw in sashimi, carpaccio or crudo. The natural oil in Kaku gives the meat a slightly grey color. Because the oil content is so high, try it on the grill and even better, on a wood fire grill. An exciting attribute of these are fish is that they are caught way, way offshore and are open ocean fish rather than the reef dwelling type.
